The Holy Land is oft-referenced as the site of the Crusades, where King Richard the Lionheart was off fighting, and where Robin Hood and his manservant Much served in the English army prior to the events of the series. Though not clarified in the series, The Holy Land is Israel, in the Middle East.
It didn't become an onscreen location for the series until "We Are Robin Hood!" in the season two finale. Robin and his band followed the Black Knights to the Holy Land, where they thwart the Knights' assassination plot. Lady Marian married Robin and died during this adventure. Djaq was reunited with her family; and she and Will Scarlett remained behind in the Holy Land, when the rest of the gang returned to England.
In "Something Worth Fighting For (Part 1)", it is mentioned that King Richard and his army left the Holy Land and were returning to England.
